Simple But Good

Cold and dreary outside! Have been trying to eat healthy lately due to all the "slip-ups" during the holidays, so was digging in the pantry trying to find something that resembled comfort food. Ahhhh Ha! A box of shells and cheese that I bought a while back when a couple of the Grands were going to be here and ended up not using. Why?? Cause one of the visiting Grands "Does Not Do Cheese" . That is another story. Anyway........I also had a pkg. of JD's breakfast sausage in the freezer, and a can of rotel tomatoes .

Rotel Shells and Cheese
Cook and prepare shells and cheese as directed.
Cook sausage till done and browned (crumbled).
Combine all with a can of rotel tomatoes.
Choose the "heat" level of the sausage and rotel tomatoes that you like. I always use Mild - What can I say -I am a Wimp. If it hurts to eat it, I do not want any - Thanks anyway!
Mix and enjoy.

I rarely make it as it is not the healthiest dish around, but it hit the spot on a cold Winter day. My daughter came by for a quick visit, and filled up a "bowl to go", which was a good thing, as it got the temptation out of the house.
Simple? Yes!
Like shells and cheese , sausage, rotel? Give it a try (when you are NOT watching your diet).
Just one of those little "No No Treats" in life!

I think I need a good dose of "get up and go", as my "get up and go" took a hike ! Probably went further South for warmer temps and sunshine. I had all these plans about what I wanted to accomplish before Spring, so could get a painter in here. It is just not happening - seems like I am just moving things around.

Just saw the weather report for the next week ! More "white stuff" in the forecast - think I need to join my "get up and go" if it did go South!

Yes, sometimes I feel like I am just "spinning my wheels". No, I cannot believe the weather. I really hope that little groundhog was not wrong, but it really looks cold next week. Take care. Your dish looks good. I cooked taco soup last night. comfort food on a cold day makes me happy.

I hear you on the low energy thing...I think it is lack of sunshine! I had to laugh at your "recipe". I was needing a bit of comfort food myself today. I grabbed a box of mac and cheese that the little grands didn't eat last weekend. I sizzled some shaved ham in a little butter and stirred it into my mac and cheese. I never do that, but it was good!

I couldnt think of anything looker nicer and just makes me want to put some on a plate and tuck in. In saying that its extremely hot here and it looks nice for the cooler weather your having over your side of the pond.

Glenda-This is true comfort food and I think I have all the ingredients! What a good idea to put this together! I cannot believe how much the baby has grown!!! It seems as though she just arrived! I want to reach out and hold her :) Did you make it to the bead show? More gloom today. I need some warm sunshine! At least we missed snow and ice!

Yummy! My son makes organic shells and cheese all the time, he adds tuna and then puts in Franks Red Hot, says it is his comfort food.

We are having lovely warm temps here, I was even able to spend a whole day in my garden beds, getting all the winter muck cleaned up! I am sooo thankful we don't have much of a winter here in Western WA.
Looking forward to Valentines Day and the wonderful beginning of Spring!

Like Donna, I've had mac n cheese with the addition of ground beef, but a nice spicy sausage sounds pretty darn good to me! Good winter weather meal. :-)
